Grilled European Avocado

You will need:

• One ripe but firm avocado • A drizzle of olive oil • Salt, pepper or spices to taste • A squeeze of lemon or lime if you fancy

Halve the avocado, brush with oil and place on a very hot griddle pan until those golden char marks appear. Salt, pepper and, if you like, a squeeze of citrus to finish. Creamy inside, charred on the outside, with an intensity that changes everything.
